INSALATA ALLA CESARE
30ml Garlic infused extra virgin olive oil
200g Ciabatta bread (broken into 4/5cm chunks)
1 Head of romain/cos lettuce
20G Parmiggiano reggiano
Ground black pepper
30ml PizzaExpress Caesar Dressing
Place the broken ciabatta bread together with the infused oil into a small bowl, add a pinch of salt and the black pepper. Mix until the oil has been absorbed.
Spread the croutons in a baking tray and bake them for around 7/8 minutes at 200c until they turn golden gold and crunchy.
Tear the lettuce leaves into 10/15cm pieces and place them in a large bowl, pour over PizzaExpress Caesar dressing, add the croutons, parmiggiano and the chopped parsley then lightly toss and serve.
