Top Tips for using cheese at your BBQ

Top tips for barbequing cheese

1. Light the BBQ half an hour or more before cooking

2. Food is best cooked over glowing coals, rather than a flame – when it turns to an ash colour it is at its hottest

3. Adding herbs like rosemary or other dried herbs to your BBQ once your coals have reached cooking temperature will add flavour to your food and create a mouth-watering smell

4. Turn your cheese-based dishes regularly on the BBQ. It should only take about three minutes for cheddar to start to melt less for Stilton. Don’t let your cheese cook too long or it will become tough and stringy

5. Basting food with olive oil helps keep food from sticking to the BBQ and keeps it moist and succulent
