The National Autistic Society have sent Celebrating Mums this wonderful recipe as a temptation for folks to getinvolved in their wonderful Festivitea fundraising campaign.
For the cup cakes:
200g / 7oz caster sugar
200g / 7oz unsalted butter, softened
2 tspns espresso strength coffee
granules
1 tbspn boiling water
4 free range eggs
200g / 7oz plain flour
For the icing:
1 tbspn cocoa powder
1 tbspn boiling water
400g / 14oz mascarpone
2 tbspn icing sugar
Grated chocolate to garnish
Method
1. Pre-heat oven to 180° / gas 4.
2. In a food mixer or by hand beat together the
sugar and butter until pale, about 5 minutes.
Dissolve the coffee in the boiling water, then
beat into the butter mix; beat in the eggs one at
a time, then fold in the flour and mix briefly until
combined.
3. Line a muffin tray with paper cake cases then
divide the mixture equally between the cases,
they should be about ¾ full. Bake in the oven
for 20 – 25 minutes until risen and the sponge
springs back when pushed. Allow to cool.
4. For the icing, dissolve the cocoa in the boiling
water, then add to the mascarpone with the
icing sugar, beat until combined. Spoon or pipe
the icing onto the top of the cupcakes and
sprinkle with grated chocolate.
Accept difference. Not indifference.
